Stocking Filler Sundays- Side Dishes

As mentioned in my last post Wednesday is the day for Christmas dinner shopping.  I’ve been making a list of all of the things we need to buy and it got me thinking about the side dishes we’ll be serving this year:

Trio of potatoes- Gratin/Fried/Roast

Potato gratin is a really creamy, garlic potato dish.  You lay slices of potatoes in an oven dish and pour heated cream and milk mixed with garlic over it.  Top with cheese and pop in the oven.  So delicious but quite heavy so only a small dish is necessary.

Fried potatoes are something we eat only at Christmas.  You boil whole potatoes and (very carefully!) slice them into round pieces.  Coat in some fresh chopped parsley and add to a shallow pan of hot oil.

Roast potatoes similarly must be par-boiled.  After they have been drained shake them around the pan a bit to make the edges rough (this helps with the crispiness).  I sometimes add a little bit of flour to make the potatoes even  fluffier.  Put in a deeper pan of oil, seasoned with salt, and cook at 200 degrees Celsius for an hour and a half.

Cranberry Stuffing

At home we always serve our stuffing on the side.  You start off by frying a chopped onion in butter in a pan.  Chop up some dried cranberries and toss them into the pan along with fine breadcrumbs.  Season as required.

Glazed Carrots & Parsnips

Cook carrots and parsnips in the oven for 10 minute in some butter. Take out and drizzle with honey.  Pop back in the oven for a few minutes before serving.


Thinking about Christmas dinner is making me so hungry- I cannot wait for Friday!
